Mario's Recipe for Yummy French Toast

May 05, 2011 Celebrity Books

Promoting his new book, "Extra Lean Family," our own Mario Lopez cooked a batch of his cinnamon-banana French toast with the help of "Modern Family" star Rico Rodriguez.

"I am excited that you're here," Lopez told Rodriguez, "Because we're going to talk about my book, 'Extra Lean Family' which combines two things we're both passionate about: food and family!"

Here's the recipe for Mario's Cinnamon-Banana French toast:

2 bananas, sliced
4 tablespoons maple syrup
1 teaspoon cinnamon, divided
4 large eggs
1 cup skim milk
1 teaspoon vanilla extract
4 teaspoons unsalted butter
8 slices multi-grain bread

In a small bowl, combine bananas and maple syrup; sprinkle with ½ teaspoon cinnamon, mix and set aside. In a medium bowl, combine eggs, milk, vanilla and remaining cinnamon, whisk well. Heat 1 teaspoon of butter in a non-stick skillet or griddle over medium heat. Dunk two slices of bread into egg mixture and transfer to hot pan. Cook for 2-3 minutes per side until golden brown. Repeat for remaining slices of bread, using an additional teaspoon of butter for each batch. Transfer to plate and top with banana mixture.
